Ingredients
- ½ cup orange juice, unsweetened
- 1 Tbsp grated orange peel
- 2 Tbsp canola oil
- 2 large eggs
- 1 cup ripe bananas, mashed (about 2 medium)
- ¼ cup honey
- ¼ cup packed brown sugar
- 2 cups quick-cooking oats
- 1 cup flour
- 2 tsp baking powder
- ½ tsp salt
- ½ cup walnuts, chopped (optional)
Recipe Directions
- Combine orange juice, orange peel, oil, eggs, bananas, and honey in a large bowl. Stir well.
- In a separate bowl, add brown sugar, oats, flour, baking powder, salt, and nuts.
- Add liquid ingredients to the large mixing bowl with the dry ingredients, and mix until combined.
- Line muffin cups with paper liners or spray with nonstick spray. Add batter so that each cup is three-fourths full.
- Bake for 20 minutes or until golden brown.
