Salmon Pasta Bake

Ingredients

  • 2 cups pasta of choice
  • 2 green onions, chopped
  • 1 (14.5-oz) can salmon in water, drained
  • 1 cup frozen peas
  • ½ cup corn
  • 1 cup nonfat or low-fat plain yogurt
  • 2 tsp dried parsley
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup Parmesan cheese, grated

Recipe Directions

  • Preheat oven to 400°F.
  • Cook pasta according to package directions. Drain in colander. Run under water until cool to prevent pasta from sticking together.
  • In a large bowl, mix salmon, pasta, green onions, peas, corn, yogurt, parsley, salt, and pepper.
  • Transfer pasta mixture to a 9-inch baking dish.
  • Sprinkle Parmesan cheese on top. Bake for 25-30 minutes, until golden and bubbling. Serve warm.
