Stuffed Mini Peppers

Yellow and red mini peppers stuffed with ground meat and cheese

Ingredients

  • 12 mini peppers
  • ¾ cup cheese, shredded
  • 1 ½ cups beans and/or ground meat (turkey, chicken, or beef) or tofu, cooked

Recipe Directions

  • Preheat oven to 400°F.
  • Line baking sheet with parchment paper. Cut peppers in half lengthwise.
  • Place pepper halves on baking sheet with the skin side down. Fill each pepper half with 1 Tbsp bean and/or cooked meat or tofu filling.
  • Sprinkle cheese over the tops of peppers.
  • Bake for 8-10 minutes. Let cool 1-2 minutes before serving.
