Beefy Macaroni and Cheese

Ingredients

  • 1 Tbsp canola oil
  • ¾ lb lean ground beef
  • 1 ½ cups water
  • 1 cup elbow macaroni, uncooked
  • 1 (15-oz) can low-sodium diced tomatoes, drained
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt and pepper, to taste
  • ½ cup (4 oz) cheddar cheese, shredded

Recipe Directions

  • In a large skillet, heat oil over medium heat until translucent, about 2 minutes.
  • Add ground beef to skillet, and cook for about 5 minutes. Stir as it cooks, and break up any large pieces.
  • Drain fat. Add water, noodles, tomatoes, and seasonings to skillet with the beef. Stir well.
  • Bring to a boil. Reduce heat to low and simmer, uncovered, for 15-20 minutes or until noodles are tender.
  • Remove from heat, and mix in cheese. Serve warm.
