Cornflake-Crusted Chicken Nuggets

Ingredients

  • 1 ½ lbs chicken thighs, boneless, skinless
  • 1 cup cornflakes
  • 1 tsp paprika
  • ½ tsp Italian herb seasoning
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Recipe Directions

  • Preheat oven to 400°F. Line baking sheet with parchment paper.
  • Cut chicken thighs into bite-sized pieces.
  • Place cornflakes in plastic bag, and crush using a rolling pin or the back of a spoon.
  • Add seasoning to bag with crushed cornflakes. Close bag, and shake until mixed.
  • Add a few chicken pieces at a time to crumb mixture. Shake to coat pieces evenly.
  • Place pieces of chicken on lined baking sheet, ensuring pieces do not touch.
  • Bake for 12-14 minutes, or until golden brown.
