Ingredients
- 1 ½ lbs chicken thighs, boneless, skinless
- 1 cup cornflakes
- 1 tsp paprika
- ½ tsp Italian herb seasoning
- ¼ tsp garlic powder
- ¼ tsp onion powder
Recipe Directions
- Preheat oven to 400°F. Line baking sheet with parchment paper.
- Cut chicken thighs into bite-sized pieces.
- Place cornflakes in plastic bag, and crush using a rolling pin or the back of a spoon.
- Add seasoning to bag with crushed cornflakes. Close bag, and shake until mixed.
- Add a few chicken pieces at a time to crumb mixture. Shake to coat pieces evenly.
- Place pieces of chicken on lined baking sheet, ensuring pieces do not touch.
- Bake for 12-14 minutes, or until golden brown.
