Holiday Quiche

Ingredients

  • 2 Tbsp cooking oil
  • ⅔ cup milk
  • 5 eggs
  • 1 cup cheese, grated
  • 8 oz mushrooms, diced
  • 4 cups spinach
  • 1 cup onion, diced
  • 2 cloves garlic, diced
  • ¼ tsp each salt and pepper
  • 1 homemade or store-bought pie crust
  • ¾ cup ground meat (chicken, turkey, beef, or sausage), cooked (optional)
  • Cherry tomatoes, halved and edible star, for serving (optional)

Recipe Directions

  • Preheat oven to 375°F.
  • In a sauce pan, sauté mushrooms, onion, and garlic over medium-high heat until onions are translucent, about 5 minutes. Add in spinach, and cook until wilted, about 2 minutes. Remove from heat, and set aside.
  • In a large bowl, whisk eggs and milk. Mix in cheese, salt, and pepper.
  • Press pie crust into quiche pan. Add vegetables and meat, if desired, evenly over top of crust. Pour egg mixture over top.
  • Bake for 30 minutes, or until the center is set and a toothpick comes out clean. Remove from heat, and let cool for 10 minutes.
  • Cut quiche. Decorate each slice with cherry tomatoes and edible star for garnish.
