Ingredients
- 1 ½ cups flour
- ½ cup sugar
- 2 tsp baking powder
- ½ tsp baking soda
- 2 eggs
- 1 ½ ripe bananas, mashed
- ¼ cup unsalted butter
- ¼ cup water
- 1 ½ cups cornflakes
Recipe Directions
- Preheat oven to 350°F, and grease a 9×5 inch loaf pan.
- In a large bowl, mix flour, baking powder, baking soda, and salt.
- Cream butter, and slowly add in sugar and eggs.
- Mix in water and mashed bananas. Add dry ingredient mixture. Stir until combined.
- Bake for 55-65 minutes, or until toothpick inserted in center comes out clean.
- Let cool for 10 minutes before removing from pan. Cool completely on wire rack.
