Ingredients
- 12 small tortillas
- 1 Tbsp canola oil
- 16 oz refried beans
- ¼ cup onion, chopped
- 2 oz green chili peppers (fresh or canned), diced
- 6 Tbsp red taco sauce
- 3 cups vegetables of choice (broccoli, mushrooms, spinach, bell pepper, etc.), chopped
- ½ cup mozzarella cheese, shredded
- ½ cup fresh cilantro or ¼ cup dried cilantro (optional)
Recipe Directions
- Brush one side of each of the two tortillas with some water. Then, press the dampened sides of the tortillas together to form the crust for the pizza.
- Lightly brush the outside of the tortillas with oil. Evenly brown both sides in a heated frying pan. Repeat with remaining tortillas, and set aside.
- Heat refried beans, onion, and half the chili peppers together in a saucepan over medium heat, stirring occasionally. Remove from heat.
- Spread one-third of the bean mixture on each tortilla pizza. Sprinkle 1 Tbsp taco sauce, and top with ½ cup chopped vegetables, 1 tsp chili peppers, and 1 Tbsp cheese for each pizza.
- Return pizzas to frying pan, and heat until cheese is melted. Top with cilantro if desired. Serve immediately.
