Banana Cornflake Bread

Ingredients

  • 1 ½ cups flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • 1 ½ ripe bananas, mashed
  • ¼ cup unsalted butter
  • ¼ cup water
  • 1 ½ cups cornflakes

Recipe Directions

  • Preheat oven to 350°F, and grease a 9×5 inch loaf pan.
  • In a large bowl, mix flour, baking powder, baking soda, and salt.
  • Cream butter, and slowly add in sugar and eggs.
  • Mix in water and mashed bananas. Add dry ingredient mixture. Stir until combined.
  • Bake for 55-65 minutes, or until toothpick inserted in center comes out clean.
  • Let cool for 10 minutes before removing from pan. Cool completely on wire rack.
