Asian-Inspired Asparagus

Ingredients

  • 1 lb asparagus
  • 2 Tbsp lime juice
  • 2 Tbsp reduced-sodium soy sauce
  • 1 ½ tsp ginger, grated
  • 2-3 garlic cloves, chopped
  • 1 ½ tsp honey
  • 1 ½ tsp sesame oil
  • 1 Tbsp sesame seeds (optional)
  • 1 Tbsp extra-virgin olive oil
  • 2 Tbsp slivered almonds, chopped (optional)

Recipe Directions

  • Wash asparagus, and cut or break off woody stems.
  • In a small bowl, mix lime juice, soy sauce, ginger, garlic, honey, and sesame oil. Set aside.
  • Toast sesame seeds in a small skillet. Once toasted, remove from heat. Set aside.
  • In a medium skillet, heat oil over medium heat until translucent, about 1 minute.
  • Add asparagus, stir, and cook for 3 minutes. Asparagus should still be crunchy but should have softened slightly.
  • Drizzle lime juice and sauce mixture over asparagus. Add in salt and pepper.
  • Top with almonds and sesame seeds. Serve warm.
