Ingredients
- 1 (15-oz) can beans of choice (black, pinto, chili, etc.)
- 2 cups frozen corn
- 3 cups brown rice, cooked
- 2 cups cheese of choice (cheddar, Monterey jack, or hot pepper), shredded
- 12 (8-inch) whole wheat tortillas
- 1 cup salsa
Recipe Directions
- Drain and rinse beans. Transfer to a large bowl.
- Thaw frozen corn. Drain, rinse, and add to bowl.
- Add rice, cheese, and salsa into bowl. Mix well.
- Add ½ cup of the mixture each tortilla. Fold the sides of the tortilla to hold mixture in place. Fold up the bottom, and then roll the filling up.
- Wrap each tortilla tightly in plastic wrap. Freeze in a single layer on a cookie sheet.
- Once frozen, seal wrapped burritos in a freezer bag to save space.
- To reheat frozen burritos, remove plastic wrap. Wrap burrito in a damp paper towel. Microwave on medium power for 3-4 minutes.
