Ingredients
- 3 Tbsp canola oil
- 3 eggs
- 2 oz milk
- ½ cup canned pumpkin
- 1 Tbsp brown sugar
- ¼ tsp ground cinnamon
- ¼ tsp pumpkin pie spice
- 1 tsp vanilla extract
- 8-10 slices whole grain bread
- Toppings of choice (syrup, honey, cinnamon butter, fruit, etc.)
Recipe Directions
- In a large skillet, coat bottom with oil, and heat over medium heat.
- In a large mixing bowl, whisk eggs, milk, pumpkin, sugar, vanilla, cinnamon, and pumpkin pie spice until well combined.
- Soak each slice of bread in mixture for 15-30 seconds on each side.
- Add soaked bread to skillet, and cook for 2-3 minutes per side.
- Serve with your favorite toppings.
