Pumpkin French Toast

Pumpkin french toast with maple syrup drizzled on top

Ingredients

  • 3 Tbsp canola oil
  • 3 eggs
  • 2 oz milk
  • ½ cup canned pumpkin
  • 1 Tbsp brown sugar
  • ¼ tsp ground cinnamon
  • ¼ tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 8-10 slices whole grain bread
  • Toppings of choice (syrup, honey, cinnamon butter, fruit, etc.)

Recipe Directions

  • In a large skillet, coat bottom with oil, and heat over medium heat.
  • In a large mixing bowl, whisk eggs, milk, pumpkin, sugar, vanilla, cinnamon, and pumpkin pie spice until well combined.
  • Soak each slice of bread in mixture for 15-30 seconds on each side.
  • Add soaked bread to skillet, and cook for 2-3 minutes per side.
  • Serve with your favorite toppings.
