Ingredients
- 2 cups pasta of choice
- 2 green onions, chopped
- 1 (14.5-oz) can salmon in water, drained
- 1 cup frozen peas
- ½ cup corn
- 1 cup nonfat or low-fat plain yogurt
- 2 tsp dried parsley
- ¼ tsp salt
- ¼ tsp black pepper
- ½ cup Parmesan cheese, grated
Recipe Directions
- Preheat oven to 400°F.
- Cook pasta according to package directions. Drain in colander. Run under water until cool to prevent pasta from sticking together.
- In a large bowl, mix salmon, pasta, green onions, peas, corn, yogurt, parsley, salt, and pepper.
- Transfer pasta mixture to a 9-inch baking dish.
- Sprinkle Parmesan cheese on top. Bake for 25-30 minutes, until golden and bubbling. Serve warm.
