Ingredients
- 12 mini peppers
- ¾ cup cheese, shredded
- 1 ½ cups beans and/or ground meat (turkey, chicken, or beef) or tofu, cooked
Recipe Directions
- Preheat oven to 400°F.
- Line baking sheet with parchment paper. Cut peppers in half lengthwise.
- Place pepper halves on baking sheet with the skin side down. Fill each pepper half with 1 Tbsp bean and/or cooked meat or tofu filling.
- Sprinkle cheese over the tops of peppers.
- Bake for 8-10 minutes. Let cool 1-2 minutes before serving.
