Bean Burger Patties

Ingredients

  • 2 cups beans of choice (black, white, kidney, etc.), cooked, liquid reserved
  • ½ cup onion, minced
  • ¼ cup fresh parsley, minced or 1 Tbsp dried parsley (optional)
  • 1 egg, slightly beaten
  • Salt and pepper, to taste
  • ½ cup bread crumbs
  • 2 Tbsp canola oil

Recipe Directions

  • Mash beans with a fork. Use 2 Tbsp of liquid from can if beans are too dry to mash.
  • In a medium bowl, combine beans with onion, parsley, egg, salt, and pepper. Add breadcrumbs by the tablespoon until mixture is barely stiff enough to mold into a patty.
  • Cover the bottom of a large, deep skillet with ⅛ inch of oil. Heat over medium heat.
  • Shape ¼ of bean mixture into a burger-shaped cake, and add to skillet. Repeat with remaining mixture.
  • Cook burgers until nicely browned on both sides, adjusting heat so they brown evenly without burning before turning, about 3-5 minutes per side.
