Ingredients

  • ½ large onion, chopped
  • 1 Tbsp vegetable oil
  • 1 tsp cumin
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • ½ tsp coriander
  • ½ tsp ground cloves
  • ¼ tsp red pepper flakes
  • 1-2 garlic cloves, minced
  • 1 Tbsp ginger, grated
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1 (15-oz) can diced tomatoes
  • 2 small or 1 large sweet potato, cut into chunks
  • ½ (15-oz) can light coconut milk
  • 1 cup fresh spinach or other greens, chopped
  • Salt, to taste

Recipe Directions

  • In a large skillet, heat oil, and cook onion for 4-5 minutes.
  • Add dried spices, garlic, and ginger. Continue to cook on low for 10 minutes to allow flavor to blend with onions.
  • Add tomatoes, chickpeas, sweet potatoes, and coconut milk. Bring to a boil, cover, and reduce heat to low. Simmer for 45 minutes.
  • Just before service, add spinach and cook for 2-3 minutes until leaves have wilted.
  • Add salt to taste. Serve warm with brown rice or on a tortilla.
