Ingredients
- ½ large onion, chopped
- 1 Tbsp vegetable oil
- 1 tsp cumin
- ½ tsp cinnamon
- ½ tsp turmeric
- ½ tsp coriander
- ½ tsp ground cloves
- ¼ tsp red pepper flakes
- 1-2 garlic cloves, minced
- 1 Tbsp ginger, grated
- 1 (15-oz) can chickpeas, drained and rinsed
- 1 (15-oz) can diced tomatoes
- 2 small or 1 large sweet potato, cut into chunks
- ½ (15-oz) can light coconut milk
- 1 cup fresh spinach or other greens, chopped
- Salt, to taste
Recipe Directions
- In a large skillet, heat oil, and cook onion for 4-5 minutes.
- Add dried spices, garlic, and ginger. Continue to cook on low for 10 minutes to allow flavor to blend with onions.
- Add tomatoes, chickpeas, sweet potatoes, and coconut milk. Bring to a boil, cover, and reduce heat to low. Simmer for 45 minutes.
- Just before service, add spinach and cook for 2-3 minutes until leaves have wilted.
- Add salt to taste. Serve warm with brown rice or on a tortilla.
